I've found that deploying spike traps on roads is incredibly effective against armored vehicles. They can't go far on flat tires!
Try to get above it! Use high ground to rain shots down on the roof of the vehicle – its weakest spot.
Use throwable explosives like grenades, Molotov cocktails, or C4 to damage or destroy it quickly. Aim for the wheels to immobilize it!
