Jo Amon is tough, but you can beat him by mastering your dodging skills and keeping your composure under pressure. Focus on counter-attacks and make sure you're fully prepared before the fight.
Just spam Heat Actions and use a lot of healing items. That's how I did it. Good luck!
I found that using the Rush style to dodge his attacks and then switching to Beast for massive damage worked wonders. Don't forget to use Extreme Heat Mode when you're in a pinch!
