You can't delete just the gamertag. It's tied to your Microsoft account. However, you can remove your account from your Xbox and stop using it.
Deleting a gamertag isn't an option, but if you really want to get rid of it, you could just abandon the account and move on.
There's no delete button for gamertags, sorry! Best bet is to create a new one if you need a fresh start.
