If you're trying to remove a building piece, pull out your hammer, right-click, and use the middle mouse button on the piece. Easy peasy!
Just use the hammer's demolish feature. It's as simple as opening the build menu and clicking 'Remove'.
You can also destroy buildings with weapons, like axes or pickaxes, but it's way easier to use your hammer's dismantle option. Trust me, I learned the hard way!
