Just head to the in-game settings, go to the Interface tab, and turn off the HUD elements you don't want. Easy peasy!

You can also use custom user missions that hide the UI. Look for them on the War Thunder forums or Nexus Mods.

Easiest way is to press Alt+Z if you're using GeForce Experience. It hides the UI like a charm!
