Just go to the move list during a fight, find your Fatality, and follow the button sequence. Easy peasy!
It's pretty simple! Look up your character's move list in the pause menu during a match. You'll see the Fatality commands there. Best part: practice 'em to nail the timing!

I main Scorpion, and his Fatality is Back, Forward, Back, A. Just memorize your character's commands and you're golden!
