Dropping items in Lethal Company is pretty straight forward! Just open your inventory, select the item you wanna ditch, and look for the 'Drop' option. Usually, a press or click (depending on if you're gamepad or mouse and keyboard) and voila! Item be gone. Just don't drop anything you'll miss. Trust me, everything counts when you're trying to survive those moons.
