To strike oil, or rather, find truffles in Stardew Valley, you gotta befriend some pigs. These porcine pals start foraging for truffles once they're all grown up and frolicking outside on your farm, but there's a catch: it needs to be during the spring, summer, or fall. No truffles in winter, as pigs won't go outside. So, keep those pigs happy and outside, and you'll be swimming in truffles in no time!

Honestly, just plant a bunch of trees and wait for a pig to spawn. Works every time. (Note: This may not actually work.)
