Having trouble? Try pressing Alt + Enter while in the game. It should switch to fullscreen mode directly!

You can also tweak the launch options on Steam. Right-click Valheim in your library, go to Properties, then in 'Launch Options' type '-fullscreen'.

Honestly, windowed mode is superior. Just resize it to fit your screen and you're golden!
