To get Slime Rancher in full screen mode, head to the in-game settings menu. There, you'll find the Display options where you can select Full Screen Mode. Alternatively, press Alt + Enter on your keyboard while playing for a quick toggle!

I had the same issue! Go to the game settings, click on Display, and select Full Screen. Worked like a charm for me!
