You can't get a custom crosshair in Fortnite on the Nintendo Switch. You're stuck with the defaults provided by Epic Games.

Unfortunately, Fortnite doesn't support custom crosshairs on any platform, including the Nintendo Switch. The default options are what you've got to work with!

From what I've tried and seen, Fortnite doesn't let you customize your crosshair on the Switch. You'll have to stick with the default one.
