Easiest thing ever! Just wander around the Jungle biome. Look down - if you see a pretty flower, that's your Jungle Rose. Grab it!

Honestly, I've spent hours in the Jungle biome and never found one. I think it's easier to trade with another player if you're really after a Jungle Rose.
