Easiest way? Just keep smashing rocks in the mine after level 40. Sometimes, you get lucky and also find them in the mine carts on those levels or from breaking open geodes.

lol just fish for treasure chests or hit up the traveling cart on Fridays and Sundays. You'd be surprised what you can find without having to swing a pickaxe.

Amethyst in Stardew Valley can be found while mining in the mines, especially starting at level 40 and below. They pop out of rocks and also can be dropped by certain mobs in those levels. Don't forget to check the Omni Geodes at the Blacksmith; they can contain Amethyst too. Happy mining!

Amethyst? Just dig deeper! Found my first bunch around level 45. It's kinda random but stick to mining and you'll have plenty in no time.
