To get caviar in Stardew Valley, first, you need to upgrade your farmhouse to include a cellar. Then, you gotta get yourself a fish pond and stock it with sturgeon, because those are the fish you need. Once the sturgeon are happy and producing roe, take that roe to a preserves jar in your cellar and voila, after a few days, you've got yourself some caviar!
