Don't forget, the quality of your honey won't change regardless of the flower, but the type and price will. So if you're looking to make big bucks, focus on growing those rare flowers next to your Bee Houses.

To get honey in Stardew Valley, you need to craft a Bee House. Once you've got your Bee House, place it on your farm. Flowers planted near the Bee House will produce different types of honey, except for poppy, which makes poppyseed honey. It takes four days for the bees to produce honey, so plan your flower garden accordingly!
