To get your hands on an incubator in Stardew Valley, you first gotta upgrade your coop to a Big Coop. Marnie's the go-to for this, and you'll need 10k gold and 400 wood. Once you've got your Big Coop, voila, an incubator comes with it, letting you hatch those eggs into chicks. Later, if you're feeling fancy and upgrade to a Deluxe Coop, you'll snag another incubator as part of the package, letting you hatch two eggs at once!
