You need to double-tap the nitro button. Time the second tap right when the nitro bar hits the blue section.

Tap the nitro button once to activate normal nitro, then tap it again when the bar is in the blue zone - boom, perfect nitro!

It's easy peasy: tap that nitro button twice, but make sure the second tap lands when the nitro bar is blue.
