To harvest carrots, just wait until they're fully grown (the game will say 'Carrot' instead of 'Carrot Sapling'), then use the 'E' key to pick them up. Happy farming!

You need to use a cultivator to plant carrot seeds first. Once they grow, you press 'E' to harvest them.

I had this same question! So, you plant carrot seeds using a cultivator. After some time, they grow into carrots, then just press 'E' to collect them. Voilà! Fresh produce for your Viking feast!
