To increase train length, click on the roller coaster to enter build mode, select the track section, and adjust the train length in the settings menu.

Just build longer station segments. Each segment lets you add an extra train car. Trust me, it works!

Why bother increasing the train length? Just build more coasters instead!

I usually just go to the ride settings and tweak the 'Train Length' slider! Works like a charm.
