Use any weapons or explosive items you have in your inventory. Get close enough and blast that quacker out of the water!
You don't need to kill the duck. It's just an obstacle. Focus on navigating around it or staying away altogether!
From my experience, building a strong, stable boat with lots of protection helps. Then, ramming the duck can sometimes do the trick.
