Ice Golems are big and tough, but they can't handle blunt weapons well. Get yourself a strong mace and whack away!
Honestly, any blunt weapon will do the job, but I've had the most success with an iron sledge. Just keep moving and dodge their swings!
Use a heavy weapon like a mace or sledgehammer to break their icy exterior. And don't forget to dodge their attacks!
You can use stagbreaker weapon and aim for headshots, that usually does the trick for me.
