A hot take: Just avoid them! Seriously, if you're not well-prepared, come back later when you have better gear.
I always use a good shield and a melee weapon with high block power. Parry their attacks, then hit them while they're staggered. Timing is everything!
Your best bet is to use ranged weapons! Bows and arrows work wonders; keep your distance and aim for the head. Dodging is crucial too, so stay mobile!
