Nah, you can't lock cars in GTA 5. Just park it well and hope for the best. Or just steal another one if yours gets nabbed.

Actually, there's no traditional way to 'lock' your car in GTA 5. I usually just leave mine in a garage or a safe spot. Keeps it away from chaos most times!
