As someone who still plays Minecraft Xbox 360 Edition, I can confirm shields aren't available in this version. You'll need to upgrade to a newer version to craft one.

Sorry to burst your bubble, but you can't actually craft a shield in Minecraft Xbox 360 Edition. Shields were introduced in the Java Edition 1.9, and Xbox 360 Edition never got that update.
