Finish a battle, save the replay, then head to the Vault section to edit it into a video. You can even add cool effects and music before sharing!
In Super Smash Bros Ultimate, you can save replays of your battles and turn them into videos. After a match, select 'Save Replay' before exiting, then go to the Vault, Replays, and you can convert and edit them. I've done it a bunch of times, and it's pretty neat!
Just record your screen if you don't care about quality. Quick and dirty, but it works.
