Making mimics in Terraria isn't as hard as you might think! First up, you gotta find yourself some Souls of Night or Souls of Light, depending on where you want your mimic to spawn; underground Corruption/Crimson for Night, and underground Hallow for Light. Then, craft a Key of Light or a Key of Night with 15 of those souls at a Work Bench. Just plop that key into an empty chest, and boom, you've got a mimic ready to surprise you, happy crafting and fighting!

Honestly, why would you wanna make mimics? Those things are terrifying! But if you're into that, just craft a key with souls and put it in a chest. Done.
