I've done this before: navigate to 'C:\Users\[YourUsername]\AppData\LocalLow\Unknown Worlds\Subnautica\options.json'. Open it with a text editor and change 'ResolutionX' and 'ResolutionY' parameters to what you want. Save and launch the game!

Open Subnautica, go to Settings -> Graphics, and you can change the resolution there. Simple as that!
