In Stardew Valley, if you're playing in the co-op mode and you don't wanna share your hard-earned gold with your farmhands, you're kinda out of luck. The game's default setting in co-op mode pools all money together for the host and farmhands. However, you can manage finances individually by being careful about what you sell and buy. For example, if you plan on purchasing something expensive, maybe coordinate with your fellow players so your balance isn't unexpectedly low.

Actually, I've played a lot of Stardew Valley with friends, and while you can't officially separate finances, we came up with a system. We use the honor system and keep track of what we each earn and spend separately on a spreadsheet. Not perfect, but it adds an extra layer of fun for us!

Short answer: you can't. Stardew's co-op mode means what's mine is yours and what's yours is mine, at least where gold is concerned. So, if you're looking to keep your earnings to yourself, you might just have to stick to single-player.
