Easy peasy lemon squeezy! Just right-click on your Plants vs Zombies shortcut, go to properties, and in the 'Target' field, add " -windowed" (without the quotes) at the end. Make sure there's a space before the dash! Launch the game and voila, windowed mode.

Been there, done that. Adding " -windowed" in the shortcut never fails. I've been rocking PvZ in windowed mode for ages to multitask like a pro!
