Actually, you can't really 'pause' Fallout Shelter in the traditional sense. The game is designed to continue certain processes (like resource generation) even when you're not actively playing. Just make sure your dwellers are set up for success before you close the app!
No need to pause! Just exit the game. Your vault takes care of itself. Been doing it since day 1, and my vault's still thriving.
