Easy-peasy, my friend! To pay your mechanic in GTA 5, you just need to have enough money in your in-game bank account. The fee is automatically deducted every in-game day (which is 48 minutes real-time). So, just make sure you're not broke, and your mechanic will happily keep fixing your rides.
