Equip a hammer, use the build menu (default key is right-click), select a torch, and boom - you've got light! Make sure you've got some resin and wood, though.
You need to have a hammer equipped, then go to the building menu, find the torch option, and place it wherever you want. Make sure you have the required materials (resin and wood) in your inventory!
Sorry, but torches are overrated. Just carry around a stack of fire arrows and shoot them into the ground for a *real* Viking vibe. ;) [Disclaimer: This might not be practical]
