Easiest way to play GTA 5 on a Mac is by using Boot Camp to install Windows on a separate partition of your hard drive. This way, you can boot into Windows on your Mac and run the game just like on a PC. Make sure your Mac meets the minimum requirements for the game, though!

Wine is another option, but I wouldn't recommend it. You'll spend more time tweaking settings than actually playing the game. Boot Camp is the way to go, or maybe a cloud service if you're not into partitioning.
