Just switch the game mode to 'Hide and Seek' when setting up your lobby. Done!

We usually play hide and seek by setting imposter vision to the lowest, crewmate vision to the highest, and reducing the number of tasks. The imposter has to find and eliminate crewmates while they try to hide and complete tasks. Tons of fun!

In the main menu, go to the 'Create Game' option, then set the game mode to 'Hide and Seek'. Easy peasy!
