Just disconnect your Xbox 360 from the internet and then launch Minecraft. Choose 'Play Offline' and it should let you play the older version without any updates!

You can get an old version of Minecraft on Xbox 360 by clearing the system cache. Go to System Settings -> Storage -> Select your storage device -> Press 'Y' and select 'Clear System Cache.' This should revert Minecraft to an older version.

Honestly, you're probably better off digging up an old USB stick with the game install on it. Just copy it to your Xbox, and voil脿, retro Minecraft!
