You can try adding Subnautica to your Steam library as a non-Steam game. Go to 'Add a Game' > 'Add a Non-Steam Game' and locate Subnautica's .exe file on your PC. Launch it from Steam and skip the Epic Games Launcher!
I've had success by creating a desktop shortcut directly to the Subnautica.exe file in the installation directory. It starts right up without the Epic Launcher!
You could use a game manager like Playnite to bypass the Epic Games Launcher. Add Subnautica to Playnite, and you should be able to run it directly.
