You gotta let a Hollow kill your character after you die and become a soul. Boom, you're a Hollow now. Consume souls to get stronger. Easy peasy!

From personal experience, all it takes is getting defeated by a Hollow NPC after you die. It's pretty thrilling becoming a Hollow and evolving your powers by devouring other beings. Totally worth it!
