You need a laptop with an HDMI input port, not just HDMI output, which is rare. If your laptop doesn’t have HDMI input, look for external capture cards or adapters that can do the trick.

As someone who’s tried this, a capture card is your best bet. I used an Elgato HD60 and it worked flawlessly. Just connect the Xbox 360 to the capture card, and the capture card to your laptop via USB.

Most laptops only have HDMI output, so it's easier to play on a TV. Otherwise, buy a video capture device and use software like OBS to display the Xbox 360 on your laptop screen.
