Once you're in game, press 'I' to open your inventory, then hover over an item and press a number key (1-4) to set it as a hotkey. Now you can quick equip it!
Hold down the inventory key and then hover over the item you want to quick equip, press a num key to assign it!
From firsthand experience, just remember to assign your most used items to the keys you can hit fastest. It saved me a bunch of times.
