You can just press the Start button to pause the game, then select 'Exit Course' or 'Save & Quit' from the menu. Easy peasy!

Hit Start, then press B to exit the level. If you want to quit the game entirely, head to the castle's main hall and select 'Save & Quit' from the pause menu.
