To record party chat on Xbox, you'll need a capture card like Elgato HD60 S and a chat link cable. Connect the capture card to your Xbox and your PC, then use the chat link cable to route the audio from your controller. Don't forget to adjust audio settings in the capture software to include chat audio. Happy recording!

You can also use the Xbox Game Bar on Windows 10! Press Win+G, go to the settings, and make sure 'Record game clips, screenshots, and broadcast using Game Bar' is enabled. You'll need to connect your Xbox party chat through the Xbox Console Companion app on your PC. Easy peasy!
