You can't directly record Xbox 360 gameplay with just a USB stick. Best bet? Use a capture card like Elgato HD60 paired with your USB drive to store the recordings.

Been there, done that. Hook up an Elgato to your Xbox 360 and your PC, save everything to your USB for easy access later. Easy-peasy!
Unfortunately, you can't. Recording directly to USB isn't an option. Use external capture hardware instead.
