Alright, to redo a heist in GTA 5, you gotta finish the story mode first. Once you've done that, you can start a heist over by accessing it through the 'Replay Heist' option in the pause menu. Just navigate to the 'Game' tab, then 'Replay Mission', and select the heist you wanna redo. Remember, your previous earnings won't stack, but hey, it's all about the thrill of the heist, right?
