Super easy! Just tap the 'remove' button if you're on console or hit the specified key on PC, usually it's the same button you used to equip it. If all else fails, jumping into water also does the trick.

I accidentally found out you can just walk into your safehouse and it disappears. Tried it after failing to fly properly and voila, no more jetpack. Safe houses are the way to go, folks.
