You simply need to take out your hammer, right-click to open the build menu, and scroll-click (middle mouse button) the roof to remove it.

All you need to do is pull out your hammer, right-click to bring up the build menu, and middle mouse click on the roof section you want to remove. Be cautious not to dismantle anything else by accident!

Removing a roof in Valheim is pretty straightforward: just equip your hammer, hold down the right mouse button to open the build menu, and then middle-click (scroll wheel click) on the roof piece you want to remove. Easy peasy!
