Simply walk up to the torch and right-click on it (or press the corresponding action button on your console's controller). This will pick up the torch and place it in your inventory. Easy peasy lemon squeezy!

Just hit it with your tool, any tool works really. I accidentally smacked a torch with my hoe and voila, it was in my backpack.
