To activate rest mode on your Xbox Series S, go to Settings > General > Power mode & startup. Then, select 'Instant-on' mode. It's like putting your Xbox to sleep, but it can still update games and apps in the background!

You actually can't put an Xbox into a true 'rest mode' like the PlayStation. Instant On is the closest thing.
