If you're on Windows, go to the system tray, right-click the Discord icon, and select 'Quit Discord.' Then just start it again.

You could also Ctrl+R while in Discord to refresh/restart it. Quick and painless!

Easiest way? Just close the app and reopen it. Works every time!

Close it in Task Manager if it's being stubborn. Open Task Manager, find Discord, end it, then reopen.
