I use QuickTime Player on my Mac to mirror the iPad screen and then share the QuickTime window in Discord. Works like a charm!

Honestly, just use Zoom to screenshare directly from your iPad and invite your Discord buddies there. Works better for me.

Just get Reflector and use it to mirror your iPad to your PC. Then use Discord to share your PC screen. Problem solved!
