Simple, there's no direct 'pity counter' in-game. You gotta keep track of your pulls manually. Just jot down how many pulls you've made after getting a 5-star to know where you stand.
To check your pity in Honkai Star Rail, you just need to head over to the gacha banner you're pulling from.
